What you can expect
Imagine being in the countryside in the heart of Puglia riding your e-bike. The first thing you will notice is the natural beauty of the region: the green hills, the centuries-old olive groves and the cultivated fields as far as the eye can see. During the tour, you could stop in some of the small towns you’ll encounter along the way, where you can discover the history and culture of the region. You could also visit local farms and producers to see how the fine Apulian food and wine products such as wine, olive oil and pasta are produced. The e-bike will give you the opportunity to cover long distances without too much effort, but I still recommend you to bring some water and snacks with you to take breaks and enjoy the view. An interesting route could take you through the Itria Valley, a region famous for its characteristic trulli, the typical white stone houses. Or towards the picturesque city of Matera stones or towards the ravines of the province of Taranto. Finally, you could end the tour in a farmhouse or b&b where you can relax and together with a chef knead and prepare some succulent panzerotti and maybe even do a little wine tasting. Come on, it’s on! First, to prepare the dough of panzerotto, together with the chef we will start to mix flour, water, yeast and salt until you get a smooth and elastic dough. Then, in the meantime the dough rises, the filling is prepared, which for the traditional Apulian panzerotto consists of tomato, mozzarella and oregano. The classic filling for panzerotti is made by the combination tomato-mozzarella, but you can choose the fillings that you like the most; in this case, ‘scante’s ricotta. When the dough of the panzerotto is ready, we will roll it out with a rolling pin until you get round sheets in which the filling must be put. With your fingers, seal the edges well to prevent the filling from leaving during cooking. At this point, it’s time to fry the panzerotti in hot oil until they are golden brown and crunchy. Now it’s time to taste the hot panzerotti with a glass of wine.
