Visit a sustainable farm, learn about the cacao tree, permaculture, and sustainable farming and see how chocolate is made. Enjoy an extensive tasting with 20 types of chocolate—all grown in Hawaii with high percentages of cacao. Try single varieties from Kauai or plain 85 percent with fresh roasted nibs, cajun spice, truffles, ginger, macadamia nuts, toasted coconut, and Tahitian lime.
Some of the samples include mole, coconut milk curry, garam marsala, spicy pepper, sea salt, almond butter, garlic, blueberry, orange with criollo nibs, and cherries. Garden Island Chocolate uses a stone melanger to grind the beans—preserving medicinal properties and high percentages of cacao—to retain high levels of flavonols (antioxidants), theobromine, phenylethylamine, and anandamide.
The farm also makes Latin American-style hot chocolate with fresh ground chocolate liquor, fresh whole vanilla pods, ground all spice, fresh coconut milk, and honey—no cane sugar. Sample cacao, lychee, starfruit, breadfruit, jackfruit, longon, grapefruit, rambutan, as well as tangerines, pineapple, macadamia nuts, sugar cane, mangos, durian, mangosteen, acai, and local honey.
